Good and Easy Eats – review and giveaway!

Have you heard the news? Kim Wilson’s new book, Good and Easy Eats, is launching on Saturday, December 10th.

I feel so blessed to be able to add another great cookbook to my collection. I don’t have any excuses to not have healthy meals and snacks available to my family every day.

I love Kim’s simple approach. In looking through Good and Easy Eats, I feel so confident that I can handle it. I don’t feel overwhelmed. Do you know the feeling? Sometimes as I glance over recipes, I get tired just reading all the steps, so I file it away, hoping some special occasion will give me the oomph I need to create it.

  • non-GMO

…and you won’t need any fancy kitchen tools. Tools that would be useful time-savers such as a garlic press, food processor or blender are helpful but not required.

Kim also shares simplified baking tips, such as her lazy one-bowl method.

Need help stocking a basic pantry? In Good and Easy Eats you will find a list broken down by category, as well as a link to a more extensive list of familiar items for your consideration.

The benefit of an ebook is you get links to more resources! Kim includes links to thrifty shopping tips, how to improve digestion of beans, and how to prioritize organic purchases (and more!).

Curious to know how Kim’s family eats on an average day? I was, too. Fortunately, she indulges us.

The Recipes

Here are some of the recipes included…and many of them have alternative versions for even more options.

Good and Easy Breakfasts - Fruit &  Nuts with dozens of options, Baked Oats, Blueberry Muffins, and non-dairy milk options. Also includes Kim’s pancake making tips.

Good and Easy Lunches – Green Salad with lots of options, Salad Pockets, soups, salad dressings, and dairy-free sour cream (made from sunflower seeds!). Also includes salad making tips.

Good and Easy Dinners – I love how the dinners are broken up into categories: American, Asian, Italian, Mexican, Potato, Soup, and Weekend. Includes tips on how to cut an onion, peel garlic, cook brown rice, and cook beans from dry, as well as a recipe for non-dairy spreadable butter from coconut and flax oils. I use pastured butter myself, but this is a great way to get those oils down.

Good and Easy Snacks – Ideas ranging from nut-butter spreads on apples to trail mix and fruit and nut balls (yum!).

Good and Easy Desserts – Would you believe you could have cookies, brownies, pies, ice cream, and even Strawberry Shortcake while keeping to gluten-free and grain-free ingredients? It’s true!

The Cost of Wholesome Eating

I get asked this a lot, and I love how Kim answers this (much like I do!). I am quoting her with permission:

But isn’t it expensive to eat naturally? Isn’t it too costly not to?

This is a common question that truly can be answered in two ways.

Yes, it can be. Commercial “health foods” can be very expensive. If you’re going to eat prepared and packaged health foods, this gets very costly.

No, it doesn’t have to be. Truly natural foods are some of the most inexpensive foods around. Dry grains, beans and seasonal produce can be incredibly inexpensive. I like to consider that we eat a “pauper’s diet” that is more in keeping with how the majority of the people throughout the world eat. Simple diets based on whole grains, beans and fresh seasonal produce can be incredibly cost-effective (say nothing about incredibly good for your health!).

I have reviewed enough books to see the value in Good and Easy Eats. If someone asked me what I would pay for Good and Easy Eats I would have to say $9.99. I like a bargain! But Kim has generously priced Good and Easy Eats at just $4.99!

I don’t know about you, but I like to print out my ebooks. I slide the pages in page protectors and keep in a 3-ring binder. This is really the best system I have found for keeping my recipes clean and wrinkle-free. I can splatter the page with tomato sauce, wipe clean, and it’s as good as new :)

    I hope I win this book! I’ve been cooking things from scratch for two months now: we’ve seen great improvements in my daughter with FXS and I’ve lose weight too. However, it can get overwhelming and very time consuming. I’d love to know where to prioritize my efforts to get most bang for my buck AND my time.
