Vitamin B-12 – Are You Deficient? + Food Sources

Vitamin B-12, although only needed in small quantities, is essential for:

  • forming red blood cells
  • a healthy nervous system
  • maintaining fertility
  • preventing anemia
  • promoting normal growth and development

It is also critical for heart health since it lowers serum homocysteine levels – high homocysteine levels have been correlated with build-up of plaque in arteries and the tendency to form clots.

How Much Vitamin B-12 Should I Consume Daily?

Here is a handy reference chart to be used as a guideline only:

Children 12 months and younger 500 mcg
Children 1 – 12 years 1000 mcg
Teens 13 -18 years 1,500 – 1,800 mcg
Adults 2,000 – 2,400 mcg
Pregnant/Lactating Women 2,800 – 3,000 mcg

Benefits of Vitamin D – Why it’s essential to health + the best food sources

I love summer. My kids love to play outside, and I can sit in the sun with my laptop and soak up the Vitamin D. It’s so comforting to have the sun on my skin, knowing not only does it feel good on the surface of the skin, but the Vitamin D that is being produced is doing the inside of my body good, too.

Then autumn rolls around, and winter, and I am worried that my family isn’t getting enough Vitamin D. We switch from fish oil – which has omega-3′s, but not Vitamin D – to cod liver oil which does contain Vitamin D. Since regular cod liver oil contains low amounts of Vitamin D (as opposed to fermented which is a more concentrated form and contains lots more Vitamin D) it’s essential I add food sources of Vitamin D to our diet.

So why am I so careful to add Vitamin D to our diet? My biggest personal reason is because it’s vital for a healthy immune system.

I am sure you’ve noticed that colds and the flu is more prevalent during the winter months when we are covered up more due to the cold (at least here in New England!). Our skin isn’t exposed to as much sunlight.

More good reasons to eat CHOCOLATE!

I am a huge fan of chocolate. But it has to be dark chocolate. Don’t even give me that nasty white stuff. How something white and reeking of vanilla could be considered chocolate is beyond me!

Yes, I am a chocolate snob.

Even milk chocolate I don’t like. I won’t even eat it. I am so used to dark chocolate (85% is great) that milk chocolate tastes like vanilla to me.

Prior to World War II, Americans didn’t ever drink skim or lowfat milk. Drinking such a product to stay “thin and healthy” would have been laughable. Americans would only drink whole milk. In fact, the larger the creamline on their milk, the higher quality the milk, and the more likely the consumer was to buy it. The Untold Story of BUTTER

About the same time the war against eggs heated up, a young scientist named Mary Enig discovered during her research that a serious mistake had occurred with regard to the studies linking saturated fat to heart disease. She discovered that the analysis had incorrectly grouped saturated fat along with trans fat (partially hydrogenated fats). How had this happened? The mistake evidently occurred because factory synthesized trans fats are very similar in chemical structure to saturated fats. Myths and Truths About Soy

Myth: Use of soy as a food dates back many thousands of years.

Truth: Soy was first used as a food during the late Chou dynasty (1134-246 BC), only after the Chinese learned to ferment soybeans to make foods like tempeh, natto and tamari.
