Warm Chia Potato Salad

I have been finding more uses for chia to add to my Chia Recipes link-up.

I’ve always enjoyed potato salad most when it’s just made and still warm. This recipe reflects that.

Lea’s Warm Chia Potato Salad

1. Peel, chop, and boil 3 potatoes as you would for any potato salad. Make sure you cut them into chunks less than 1″ wide.

2. When tender, drain and rinse under cool water for a few seconds, then turn into medium bowl. Set aside.

3. In a small bowl, mix together until well blended:

  • 1/2 cup egg salad
  • 1/4 cup mayo (I like homemade mayo)
  • 2 TBSP sesame oil
  • 3 green onions/scallions, chopped
  • 2 TBSP chia seeds
  • 1/4 tsp celery seed
  • 1/4 tsp salt (I like REAL salt)

4. Pour the contents of the small bowl over the potatoes in the medium bowl and stir together.

5. Serve warm. Also tastes great cold. Enjoy!
