I was chatting with a friend last night, and realized I hadn’t yet posted my recipe for Chocolate Chia Pudding. I was inspired by Adrienne’s recipe over at Whole New Mom.
Before I post my recipe, I want to share with you why I use and love chia seeds.
Chia seeds are the richest plant source of omega-3′s. Just one tablespoon contains 2,375mg’s. They are a complete protein as they contain all the essential amino acids in appropriate balance. Now for the recipe…
Chocolate Chia Pudding
Blend a good 3-5 minutes, or food process 5 minutes or until a thick, pudding consistency. Enjoy as is or top with whipped cream.
In your food processor add heavy whipping cream (preferably raw) until it covers the top blade (1 1/2 cups or so – sorry I never measure this!). Turn on your food processor and slowly add up to 4 TBSP sugar. I am bad and use white, but only because the cream is light and sucanat doesn’t make very good whipped cream. You can tell when it’s done, in just a minute or two, when the cream thickens up nice.
