Easy No-Fail Mayo
Seriously. Why didn’t I think of this before? It’s so simple, I feel silly for not having even considered it when I posted my original Make Your Own Homemade Mayo recipe.
I have to thank MC, a reader who posted on that mayo post asking about coconut oil. She pointed out how harmful hydrogenated oils are, and she’s absolutely right – sunflower oil is 50% omega-6, as are corn, soybean and cottonseed oils. Safflower is even worse at 80% omega-6. MC asked if coconut oil would work instead, and I told her I’d try it.
But then I saw the palm shortening, and a light went off.

Chocolate Chia Pudding + Whipped Cream recipes
I was chatting with a friend last night, and realized I hadn’t yet posted my recipe for Chocolate Chia Pudding. I was inspired by Adrienne’s recipe over at Whole New Mom.
Before I post my recipe, I want to share with you why I use and love chia seeds.
Chia seeds are the richest plant source of omega-3′s. Just one tablespoon contains 2,375mg’s. They are a complete protein as they contain all the essential amino acids in appropriate balance. Best Peanut Butter Cookies (recipe!)
I can’t believe I haven’t yet shared my PB cookies recipe! I make this regularly for my husband. Although he’s diabetic and avoids carbs, these are the only carbs he eats. He enjoys two or three I don’t make them huge) with his tea in the evening.
Sometimes I sneak some ground flax in these cookies (shh, don’t tell him!).
These come out much better now that I bake them on stoneware – as you will see from the photos that follow…

Pumpkin Cookies – recipe from Smart Sweets!
Mmm. This is the photo I shared on Facebook earlier – Pumpkin Cookies from Katie Kimball’s Smart Sweets: 30 Desserts to Indulge Your Sweet Tooth book.
Technically, these are Butternut Squash Cookies because that is what I had on hand. I made Pumpkin Cookies a few weeks ago, and boy were they good!
These are a nice, soft cookie, but not cake-like. They have been a hit with everyone I have shared them with. This is my “new” chocolate chip cookie!

High-Protein Pancake Recipe
Mmmm, now who doesn’t love pancakes?
I used to only serve pancakes on Saturday mornings. Even though I made my own pancake batter, I still wasn’t thrilled about the lack of protein.
However, due to the large amount of eggs our chickens are producing, I have been looking for recipes calling for more eggs. So what a blessing that my good friend Miriam asked if I was interested in a high-protein pancake recipe. She got it from our mutual friend Ruth (thanks, Ruth!). I tweaked the recipe a little, adding 8 eggs instead of 4, doubling the flour, and omitting the vanilla extract. These are soooo yummy! My kids are happy they don’t have to eat scrambled eggs…again…and I am happy that we are still using eggs for breakfast. Read the full post here →

Egg Egg Salad recipe
I have always loved egg salad. This is a good thing, really, because our Barred Rock chickens just started to lay. We have 50 Barred Rock hens, plus a dozen Golden Comets. We’re now getting three dozen eggs a day, and when they all get started we’ll have 62 eggs a day! *gulp*
So I am starting to actively seek out recipes requiring several eggs. Here is one of my favorites with a twist.

Make Your Own Yogurt!
I tried making yogurt a few years ago. I bought a yogurt maker (similar to this one) and I wasn’t happy with the results.
Why? I wasn’t patient enough.
I let the heat get too high, which resulted in a very thin batch that never thickened.
Since I have been going through the tubs of Stonyfield Plain Whole Milk yogurt, I decided to make my own. Since I don’t have a source for raw milk, I am buying Stonyfield Organic milk because at least there’s no hormones, steroids, or antibiotics in the milk, and that is what they use in the yogurt I’d been buying from them anyways.
I determined that since I would be saving money by making my own, I would pay better attention this time.
