Breast to Bib – review and giveaway!

You know, there are so many great books out there, and this is definitely one of the best.

Breast to Bib by Kate Tietje is a book I wish I had access to when I was pregnant with my children.

I was honored to be able to review Breast to Bib before it was published. You will find the following quote of mine at the top of the list under “Praise for Breast to Bib:”

Okay, I am in total love with your book. I have never been so happy with a book written about baby foods! I jumped on the “AP” bandwagon eight years ago, and have been immersed in all things AP since. I agree whole-hardheartedly with your breastfeeding advice, when to introduce what foods to toddlers, and your advice about supplements. Your recipes are easy to make and wholesome foods the whole family can enjoy!

You see, it’s not very often you find a gem like this. Read the full post here →

Good and Easy Eats – review and giveaway!

Have you heard the news? Kim Wilson’s new book, Good and Easy Eats, is launching on Saturday, December 10th.

This is a great collection of simple recipes that are easy to put together, yet are packed with flavor and easy on the budget.

I feel so blessed to be able to add another great cookbook to my collection. I don’t have any excuses to not have healthy meals and snacks available to my family every day.

I love Kim’s simple approach. In looking through Good and Easy Eats, I feel so confident that I can handle it. I don’t feel overwhelmed. Do you know the feeling? Sometimes as I glance over recipes, I get tired just reading all the steps, so I file it away, hoping some special occasion will give me the oomph I need to create it.

Kim’s top two goals of flavor and nutritional value is plain to see as you browse Good and Easy Eats. A self-described simple (“bordering on lazy”) cook, you don’t have to worry about spending lots of time in the kitchen. Read the full post here →

What the Bible Says About Healthy Living Cookbook – review and giveaway!

What the Bible Says About Healthy Living Cookbook by Hope Eagan and Amy Cataldo is full of tasty recipes in a convenient layout.

The authors acknowledge the fact most people just don’t have the time to spend planning, buying, and cooking meals, so these recipes are easy to fix and tasty to boot.

With ingredient options for variety and quantity ranges for sweeteners to allow for personal preferences, this cookbook was put together with lots of consideration.

Encourages organic food choices; whole grains over processed; high-quality meat in smaller amounts less often rather than commercial meat with each meal; yes to sea salt; avoiding GMO foods, antibiotics, and hormones in your food.

Endorsed by Rex Russell, author of What the Bible Says About Healthy Living, this cookbook follows these three principles:

Principle 1: Eat only substances God created for food. Avoid what is not designed for food. Lots of vegetables in these recipes since most of us do not eat enough. Variety is key!

Principle 2: As much as possible, eat foods as they were created – before they are changed or converted into something humans think might be better. The authors are motivated to avoid processed foods and use as many whole grains and organic ingredients as possible. At the same time, they are realistic given most people’s lack of time for cooking everything from scratch, and use canned beans and tomatoes in these recipes.

Principle 3: Avoid food addictions. Don’t let any food or drink become your god. This is not hard to do if you follow the first two principles. Desserts are included, but they are healthy versions using honey or fruit or maple syrup.

Most recipes in What the Bible Says About Healthy Living Cookbook include a section called “Divine Design” where nutritional facts are shared – God’s amazing design behind your food. Variations are present in most recipes, as well as a “Love Thy Leftovers” section that suggests you turn your Basic Cooked Rice into Fried Rice. Read the full post here →

Everyday Wholesome Eating – review and giveaway!

I am excited to share a review for another one of Kim Wilson’s books, Everyday Wholesome Eating.

The slogan on the inside of the book reads, “Discover the joy and simplicity of preparing whole natural foods for your optimal health.” Love it!

This book is well-laid out, with easy-to-read fonts, and spiral-bound (I love how spiral-bound books lay flat). There are two indexes in the back: one for recipes, one for information – very handy.

What it Has, What it Doesn’t

Featuring wholesome ingredients, Kim encourages you to eat in season with a handy list of in-season foods. Unrefined, unprocessed, whole, organic foods with minimal cooking required. Kim’s recipes don’t include wheat, corn, soy, or sugars (even natural ones, except fruit).

Kim bases her recipes around Six Simple CategoriesRead the full post here →

Health Benefits of Chia Seeds – and a challenge

Did you know one tablespoon of chia seeds contains 2,375mg’s of omega-3′s? Chia seeds are the richest plant source of omega-3 fatty acids.

Chia seeds contain the highest known proportion of alpha linolenic acid (ALA) at over 60%. The omega-3 to omega-6 ratio is 3:1. They also contain 19-23% complete protein, providing all essential amino acids in appropriate balance.

Chia seeds are the superfood.

Unlike flax seed, another high source of omega-3′s, they don’t need to be ground before consuming. You can toss them on salads or in your yogurt, add to banana bread, or make a fruit pudding (recipes below).

Due to the strong antioxidant activity, the omega-3′s (DHA, EPA) are not easily oxidized like they are in flax seeds which don’t contain antioxidants.

Here is a breakdown of nutrients that you will find in one serving (2 TBSP) of chia seeds… Read the full post here →
