Vitamin “C”reamsicle Gummies

One of the secret weapons of parents is to make children think they are getting treats when they are in fact getting a boost of nutrition.

Take these gummies, for example. A shot of Vitamin C wrapped up in a creamsicle-flavored package resembling candy. High fructose corn syrup-laden store-bought gummies just can’t compete!

Vitamin “C”reamsicle Gummies

  1. In a small saucepan add the following:
  • 1 cup orange juice (fresh is preferred, but store-bought will work)
  • 4 TBSP gelatin (I use this beef gelatin)
  • 2 TBSP Vitamin C powder (I get mine from Live Superfoods)

2. Once mixed together, add:

3. Turn on the heat to medium, and stir until honey is mixed in.

4. Keep stirring as the lumps start to disappear. This is when you can add:

5. In a few minutes you will start to see bubbles. Keep stirring every few moments to ensure nothing sticks to the bottom of the pan.

6. Once bubbles are covering the surface, you know you’re done.

7. Now you can transfer the liquid gummies to a measuring cup with a pouring spout and fill your silicone molds. I like the hearts.

TIP: place the silicone molds on a flat plate or tray so as not to cause lots of movement when you transfer to the fridge.

8. Refrigerate 45 minutes or until firm. Transfer to glass jars and store in the refrigerator.
