Lea’s Easy Thick Crust Pizza Dough Recipe
In stand mixer add:
- 3 cups freshly ground whole wheat flour (I grind my own flour from hard red wheat berries using the Country Living Grain Mill). Regular flour will work if you don’t grind your own.
- 2 teaspoons dry active yeast
- 2 teaspoons sucanat or brown sugar
- 2 teaspoons garlic powder
- 1 teaspoon italian seasoning
- 1 teaspoon salt - I like REAL salt
Stir until mixed (15 seconds or so) then turn on medium-low and slowly add:
- 1 cup very warm water - hot, but not boiling (I use hot tap water from our well)
- 2 tablespoons olive oil - or melted coconut oil.
Then add another 1/4 - 1/2 cup very warm water. Amount will vary depending on your flour. Just add until dough forms a ball. It should not be sticking to the sides. If it is, add more flour until you get it right.
When ready, place the dough in a large bowl greased with oil or butter.
Cover with kitchen towel and place in a warm place (I put mine on top of the upright freezer in my pantry) for two hours. Longer is okay.

Yes, you can! I personally have not frozen pizza dough, but many people do successfully. You just want to be sure you wrap it well so none of the edges are exposed to air or they will get hard and dry out.
Does anyone have a recipe for the pizza dough that is made with cauliflower? My daughter can’t have flour or wheat.
