Huh? What is Einkorn?
That is what I was thinking to myself when Tropical Traditions asked me to review this “new” ancient wheat.
To answer my question…Einkorn “farro” is an ancient grain - the oldest variety of wheat there is. Where modern wheat varieties have six sets of chomosomes, Einkorn has only two, making it a diploid.
Originating in the Tigris-Euphrates region of the Near East, Einkorn hasn’t been hybridized like modern wheat. And why were these modern wheat varieties messed with in the first place? The kernels do not thresh free of their hard coverings, which creates more work. Once they altered the wheat, it became easier to harvest and mill.
But that was not the only thing that got messed with. Modern wheat also has a higher gluten content, which makes for better bread - but also gluten toxicity issues!

Einkorn Wheat vs. Hard Red Wheat
Check out the difference in the shape of the Einkorn Wheat (first photo below) and the Hard Red Wheat (second one down).
Although they are about the same size, the Einkorn Wheat is flatter and smoother.
Check out the differences between how they grind up.
The Einkorn flour (below) is white and fine.
This Hard Red Wheat flour has not been disturbed, and you can see the darker areas where it is more coarse.

I’ve heard of Einkhorn wheat but have never tried it. I’d love to give it a try!
just want to use a wheat that is NOT GMO - and have heard about this and would love to try it!

I’d like to try this type of wheat. I’m gluten-sensitive, but I’ve read (in Nourishing Traditions) that if you soak the flour you might be able to tolerate wheat products. So maybe it would work?
