I have to thank my husband for this one. When he saw my nuts soaking he asked, “are you soaking them in kefir?” I wasn’t (the pecan water turns brown, making it appear so), but I thought it was a brilliant idea. I mean, why not?
After that, I did add about 1 cup water kefir to the nuts (along with the water) when soaking them.
Probiotic soaked nuts were born!
Below you can see my walnuts, almonds, and pecans soaking away. I let them soak overnight. In the morning, I drained them, then dehydrated them all day long.
Now I have probiotic nuts to snack on.

Does it affect the taste?
I thought I noticed they were slightly sweeter, but I wasn’t sure if it was my imagination. My kids couldn’t tell.
Will LABS grow on nuts? Seems like there’s not a lot of carbs in nuts, and if they’re whole, you’d not have a lot of surface area for them to feed on.
I can see adding nuts to a fermented chutney or something, but it doesn’t seem like nuts by themselves would grow much.
I don’t have a microscope myself!

I was wondering do you need the water kefir to make probiotic nuts. Or can you just use water?
You do need the water kefir to make it probiotic. It’s the water kefir that has the beneficial bacteria and yeasts.
Water will give you soaked nuts, which are also great
I am certain I should understand this by now….and yet, still I must ask….how does one do/get kefir water? Can I start kefir water with some of my raw milk kefir grains?
Milk kefir grains and water kefir grains are two different grains. Although some people have successfully swapped them from one to the other, I’d rather not take that chance.
