Has anyone made their own vanilla extract? I’ve been wanting to make my own, and have seen articles posted about making it (like this one http://www.tammysrecipes.com/homemade_vanilla_extract). I actually was at the health food store today and saw they were almost $8 per bean! Not only that, I just can’t drum up the courage to do in a *gasp* liquor store to get some vodka!
So….anyone make their own? How did it come out?

Yes! I made it a couple of years ago to give out as Christmas gifts. People LOVED it! It should be started at least 3 months before you want to package it up. I shopped around and found several vanilla beans at a good price (don’t remember the amount at the moment) and bought about 2 quarts of the cheapest vodka I could find. I sliced the vanilla beans just enough to break the skin but not to cut in half and then I popped them into the bottle of vodka and let them marinate happily together for the next 3 months. When it came time to package them up, I included a vanilla bean inside each bottle that I was gifting. I put a pretty label on it my daughter designed and tied it up with a nice ribbon. I think I still have 2 or 3 beans still steeping in what’s left of my bottle of vodka. I’m thinking about buying some more vodka to add and see if I can get more flavor from these same beans. I’m anxious to see how long I can stretch these beans into some good vanilla.
