In stand mixer beat together:
1 cup sucanat or whole cane sugar
3/4 cup palm shortening
1/4 cup molasses
Add 1 egg.
In a separate bowl combine:
1 1/4 cups whole wheat flour
1 tsp baking soda
1 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp ground cloves
Then add to stand mixer slowly. Once combined, Beat on medium-high speed until thoroughly combined.
Shape into 1″ balls (I use my 1″ cookie scoop) and roll in sucanat if you want.
Place 2″ apart on ungreased cookie sheet (I like stoneware).
Bake in 375 degree oven 10 minutes or until golden.
