Isn’t this beautiful? Like a big bowl o’ sunshine. It reminds me of the popcorn you get at the movies - except without the excess table salt
My popcorn is naturally yellow due to the Red Palm Oil I popped it in. I was inspired by Wardeh and her son when they popped corn in red palm oil during the ecourse Real Food Kids: In the Kitchen.
Red Palm Oil is full of Vitamin A. Fortunately, the gobs of Vitamin A contained in this palm oil is not damaged by heat - unless you allow it to smoke or burn
Just how much Vitamin A does Red Palm Oil contain? 200% of your daily value per tablespoon - that’s 10,000IU’s!
I used my standard stove-top popcorn recipe except I used 1/2 cup Red Palm Oil and 1 cup popcorn kernels. The only popcorn I trust now comes from Tropical Traditions, as they have non-GMO kernels.
I like to top my popcorn with Kerry Gold butter or ghee and REAL salt (above). This time I also whipped up some homemade caramel after a wonderful two-ingredient recipe my friend Sherry told me about (I’ll share that recipe with you tomorrow!)

Just an FYI, there are no GMO popcorn varieties available for sale. However, popcorn is a popular “refuge” crop for GMO varieties, so is probably heavily sprayed, so buying Organic is important.
