I was chatting with a friend last night, and realized I hadn’t yet posted my recipe for Chocolate Chia Pudding. I was inspired by Adrienne’s recipe over at Whole New Mom.
Before I post my recipe, I want to share with you why I use and love chia seeds.
Chia seeds are the richest plant source of omega-3′s. Just one tablespoon contains 2,375mg’s. They are a complete protein as they contain all the essential amino acids in appropriate balance. Chia seeds contain 11g’s of fiber, 4g’s protein, and 27 nutrients. Read more about chia seeds here: Health Benefits of Chia Seeds.
Now for the recipe…
Chocolate Chia Pudding
In your Vitamix (food processor also works) add:
2 cups milk (preferrably raw)
1/2 cup chia seeds
3 TBSP cacao powder or cocoa powder
4 TBSP sucanat
Blend a good 3-5 minutes, or food process 5 minutes or until a thick, pudding consistency. Enjoy as is or top with whipped cream.
Whipped Cream
In your food processor add heavy whipping cream (preferably raw) until it covers the top blade (1 1/2 cups or so - sorry I never measure this!). Turn on your food processor and slowly add up to 4 TBSP sugar. I am bad and use white, but only because the cream is light and sucanat doesn’t make very good whipped cream. You can tell when it’s done, in just a minute or two, when the cream thickens up nice.

Thank you for the good information . I first met chia seeds last month on a tv program called Dr. Ozz. He mentioned that they have the capacity to swell in size -thus making you feel full longer.
I need the omega 3′s for my eyesight .
Can you tell me what I can substitute for the sucant? Either white sugar or stevia?

Yes, any other sweetener will do. They have different flavors, but go for it!
I must have done something wrong. We made this yesterday and let it set up in the fridge overnight. It has an overbearing chia taste and is somewhat bitter. My kids wouldn’t eat it and I honestly can’t blame them. I’m wondering if I was supposed to soak the seeds as compared to using 1/2 C. of the dry ones in this recipe? Any advice is greatly appreciated!
There’s no need to soak the seeds - but did you let the whole thing blend several minutes? I would try upping the sweetener until you like it
