You know when you are tired at the end of a long day and it’s hard to think straight? Yeah, well that was me on Thanksgiving Eve. What was I thinking packing a Fido jar to the very top? Did I not realize that the next morning it would be sputtering on my counter, and when I went to open it, it would spray everyone in reach? *sigh* I guess I can let you in on a little secret: I may know a thing of two about kraut, but I am a total newbie when it comes to fruit ferments.
It does make for a nice photo, though, right? Or does it look more like a barfing Fido? Hmm.
Well anyways, the chutney was delicious
I shared this on the Fido Fermentation group Wednesday, but here is the recipe for the rest of you:
Apple-Cran-Nut Chutney
In a large bowl mix together:
6-8 apples peeled, cored, and chopped (I used my apple peeler/corer/slicer and it went super quick)
1 cup chopped walnuts (or pecans)
1 cup dried cranberries
1 1/4 cups water kefir (learn how to make your own water kefir)
juice of 2 lemons
2 TBSP sucanat or whole cane sugar
1 tsp REAL salt
2 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp ground fennel
1/4 tsp ground black pepper
Mix well.
Using wide-mouth funnel, transfer the apple mixture to your Fido jar. Close the lid and clamp shut. You can also use a Pickle Pro lid on a mason jar or a Cooking God’s Way airlock system on a mason jar.
Make sure you don’t fill past the shoulder like I did.;)
Ferment 12-24 hours room temperature before consuming, so the probiotics get a chance to populate. Refrigerate once you open, not longer than three days, as fruit tends to get mushy if left out at room temp too long.
