Science Facts Sundays: Maximizing Iron Absorbency, Part 9 (Final): Meal Ideas

These are some notes I took when reading Iron Rich Foods: Unlock the Iron in Your Food and Fight Iron Deficiency by Amanda Rose, PH.D.

My daughter knows why we don’t drink milk with an iron-rich meal. She can tell you, “calcium inhibits iron absorption!”

I don’t see the point of eating foods and not being able to absorb them and utilize all their benefits. What a shame to waste the iron in our foods when we eat them with dairy products. Simply knowing to separate the foods for ultimate utilization can be helpful for combating low iron levels.

You may find this geeky - so be forewarned! If fermentation doesn’t appeal to you, check back in a few weeks and I’ll have moved on to something else that you may be interested in.

Apple-Cran-Nut Chutney

You know when you are tired at the end of a long day and it’s hard to think straight? Yeah, well that was me on Thanksgiving Eve. What was I thinking packing a Fido jar to the very top? Did I not realize that the next morning it would be sputtering on my counter, and when I went to open it, it would spray everyone in reach? *sigh* I guess I can let you in on a little secret: I may know a thing of two about kraut, but I am a total newbie when it comes to fruit ferments.

It does make for a nice photo, though, right? Or does it look more like a barfing Fido? Hmm.

Kefired Applesauce

One of the benefits of living in New England is being able to pick apples in autumn. We have an apple orchard right in town and they grow such beautiful apples!

I ended up purchasing two bushels over two weekends. My kids were elated since I refuse to buy commercial apples, and the organic apples I could buy are usually wrinkled as well as pricey.

Apart from enjoying apples raw, I froze some slices for apple pie next month, and I dehydrated many into apple chips (I’ll share that recipe/method soon!). Continue reading

High-Protein Pancake Recipe

Mmmm, now who doesn’t love pancakes?

I used to only serve pancakes on Saturday mornings. Even though I made my own pancake batter, I still wasn’t thrilled about the lack of protein.

However, due to the large amount of eggs our chickens are producing, I have been looking for recipes calling for more eggs. So what a blessing that my good friend Miriam asked if I was interested in a high-protein pancake recipe. She got it from our mutual friend Ruth (thanks, Ruth!). I tweaked the recipe a little, adding 8 eggs instead of 4, doubling the flour, and omitting the vanilla extract. These are soooo yummy! My kids are happy they don’t have to eat scrambled eggs…again…and I am happy that we are still using eggs for breakfast. Continue reading

Sesame Honey Bites & Sesame Molasses Bites

Last week when I posted 5 Lies You’ve Been Told About Calcium, I shared a chart showing the amounts of calcium in foods. Sesame seeds topped the list! So when you eat these, ditch the calcium supplements that day - you won’t need them (hooray for eating food rather than supplements!).

I googled “sesame candy” and came across a recipe that I tweaked enough I can call it my own. I ended up with two recipes since I had both white and black sesame seeds on hand.

Lea’s Applesauce Bake - perfect autumn treat!

We went apple picking and I had to bake a yummy treat! I was too lazy to slice all the apples for Apple Crisp (and I was out of oats!) so I decided to just food process everything and make a new treat.
